Indulge without the bulge - Healthy weekend pancakes

In celebration of the Gold Coast Show Day tomorrow and a long weekend I wanted to post my new favourite recipe of pancakes.

Who said you can’t eat pancakes while eating healthy?
I made these last weekend and I was a little sceptical of how they would turn out but they were so delicious and my only complaint was I didn’t make enough because I wanted more!

 
Easy and Healthy Banana Oat Pancakes

Ingredients
2 bananas
2 eggs
½ cup rolled oats
½  teaspoon cinnamon
1 teaspoon vanilla essence
Rice malt syrup (to serve)
Fresh fruit  of your choice (to serve)
 

Combine bananas, eggs, rolled oats, cinnamon and vanilla essence
in a blender
and blend until well mixed.
Heat a fry pan and pour a small amount of mixture in the pan.
Cook until bubbles form and flip to cook the other side.
Pour rice malt syrup over pancakes and top with fresh fruit.

Enjoy!
