Raw choc tahini/caramel slice

I am seriously obsessed with tahini. OBSESSED! I always buy the Mayvers brand because it's Australian made and organic and just so much better for you than the over processed brands.



Tahini is so great for you it's packed with powerful nutrients, essential vitamins and minerals plus 3 unique antioxidants that have been clinically proven to naturally lower the bad cholesterol which can lead to coronary heart disease. It's one of those good fats so get that stuff into you!

I hadn't been baking a lot lately and I really felt like something sweet to satisfy that crazy sweet tooth I have, but wanted something healthy and sugar free and so the raw choc tahini/caramel slice was made. It was really sweet so you don't need much at all in one go which is great because now I have lots more sitting in my freezer just waiting to be eaten. This was seriously one of the easiest things I have made, it was quick and so delicious. you can't go wrong!



Base

1/2 cup oats
1/2 cup almonds
1/2 cup dates
1/4 cup shredded coconut
Rice malt syrup

Blend the oats, almonds, dates and coconut in a food processor till crumbly and slightly sticky. Pour into a bowl and keep adding the rice malt syrup until the mixture sticks together. This will vary depending on how sticky the dates were that you used. Press down into a pan or muffin tins if you want to make small ones. Put into the freezer to set while you make the tahini caramel.

Tahini Caramel

1/2 cup tahini
1/2 cup rice malt syrup

Stir together until well mixed and pour over your base. Put it back into the freezer to firm while you make the chocolate topping.

Chocolate Topping

1/4 cup melted coconut oil
1/2 cup cacao or cocoa
1/4 cup rice malt syrup (you may want more depending how sweet you want to make the chocolate)

Stir together until well mixed, keep adding rice malt syrup until you get the taste you want, you may need to add a little bit of water as it gets thicker, you need to be able to pour over your caramel.
Pour over the caramel and freeze until set.

Keep the slice in the freezer until you are ready to eat them, you can pull them out a few minutes before to soften.
